Brown Stewed Chicken

Here's a delicious recipe for Jamaican-style brown stew chicken:

Instructions:

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

 

Season the chicken pieces with salt and pepper. Add them to the pot and brown them on all sides until they are golden brown. Remove the chicken from the pot and set aside.

 

In the same pot, add the sliced onion, minced garlic, bell pepper, and carrots. Sauté for about 5 minutes, until the vegetables start to soften.

 

Add the diced tomatoes, soy sauce, ketchup, Worcestershire sauce, brown sugar, dried thyme, allspice, paprika, black pepper, and salt. Stir well to combine all the ingredients.

 

Return the chicken to the pot, along with any accumulated juices. Pour in the chicken broth and bring the mixture to a simmer.

 

Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes to 1 hour, until the chicken is cooked through and tender.

 

Stir occasionally and check for seasoning, adjusting if necessary.

 

Once the chicken is cooked, remove it from the pot and transfer it to a serving dish.

 

If desired, you can use an immersion blender to blend some of the sauce to create a thicker consistency. Alternatively, you can leave the sauce as is.

 

Pour the sauce over the chicken, garnish with fresh chopped parsley, and serve hot.
